FCoE is a great dead end

As I understand it FCoE depends upon datacenter-class Ethernet (DCE?) which will not lose or delay packets. This is still a developing standard but looks to be roughly like an interstate highway compared to the normal Ethernet's two lane blacktop. DCE would separate non-mission critical traffic from the other traffic so, to that extent, your concern would be countered.

Do you think FCoE will be a better way for non-Fibre Channel HBA servers to access Fibre Channel SANs than iSCSI through to an iSCSI port switch?

I think most people will want to take the path of least disruption - that would probably mean the iSCSI port switch.
